Professional courses sommelier

Level I

A unique opportunity to learn the art of tasting

You will learn to recognize the secrets of wine, master the art of tasting all within this beautiful experience: being in the heart of Italy – Chianti region.

Every day, agronomists, professional sommeliers, wine experts and university professors will hold a two-hour lecture, consisting of theoretical and practical parts – tasting of five wines of high quality, with subsequent analysis of the organoleptic characteristics of the wine.

The course is organized in conjunction with the “European Schools Sommelier”. All degrees awarded to graduates of the course, refer to the European School of sommeliers, as evidenced by the International Diploma.

At the end of the course, after the final exam, participants receive an official certificate “Sommelier”, confirming the ability of high-level sommelier tasting. Course participants will also receive: small bowl of silver-plated metal, used for wine tasting, worn around the neck as a sommelier logo and icon European School sommelier.

Course Topics: analysis of the organoleptic characteristics of the wine: visual, olfactory and taste; lectures on agriculture and winemaking; combination of dishes, wines and sparkling wines. At the end of the course includes a visit to the wine cellar for so-called “vertical” tasting (tasting one type of wine produced by the same manufacturer, but in different harvest years), all tasting wine farms are accompanied by explanations of highly expert sommelier.

History of Wine, from the Romans to the present day. Viticulture and winemaking from the Mediterranean to France. Introduction to the world of wine and the senses. Practical part – 4 types of wine tasting

 Lesson 2

Visual inspection.

Appearance of wine, transparency, intensity, shades. Practical part – 4 types of wine tasting

Lesson 3

Examination of smell. Origin of flavors. Primary, secondary and tertiary aromas. Practical part – 4 types of wine tasting

Lesson 4

Taste examination.

Basic tastes, the impact of various stages of winemaking and maturation.

Practical part – 4 types of wine tasting

Lesson 5

Viticulture.

Types of grapes. Work in the vineyard. Balance of taste and smell. Practical part – 4 types of wine tasting

Lesson 6

Verification.

Scheme of wine from the grapes to the wood. White and rose wines.

The importance of wood in the process of maturation.

Practical part – 4 types of wine tasting

Lesson 7

Combinations of food and wine.

Tasting of typical Tuscan products, and combinations thereof with wine.

Final examination

Practical part – 4 types of wine tasting

The course fee also includes 6 ISO glasses of wine tasting, training materials.

Rome – Florence-Rome

  1. Arrival in Rome.

    Transfer to the villa near Florence. Accommodation in a villa. Welcome aperitif.

  2. 10.00 Sightseeing tour of Florence. After the meeting with the chef and the purchase of products on the Florentine market, you will return to the villa.

    13.00 – 14.00 Cooking course: first and second courses. Free time relaxing at the villa.

    18.00-20.00 Course Sommelier (Lesson 1)

    Free time.

  3. Italian-style breakfast in the villa

    10:00 Trip to the Chianti Classico valley with an assistant. Visit one of the best wineries in the world – “Antinori”, wine tastings and sommelier course (lesson 2). Lunch Time. Return to the villa. Free time.

  4. Italian-style breakfast in the villa.

    10:00 A trip to Pisa and Lucca with the assistant. Lunch in a typical restaurant. Arrival at Grotta Giusti thermal springs , relaxation in a thermal pool. 18.00 Return to the villa. Dinner.

    20-22.00 Sommelier Course (lesson 3)

  5. Breakfast at the villa. Free time or excursion to the Uffizi gallery. Lunch Time. Wine tasting at Villa Le Piazzole and Sommelier Course (Lesson 4)

  6. Breakfast at the villa.

    Departure to Siena and San Gimignano. Visit to 2 wineries, wine tasting of Brunello and Rosso di Montalchino and (lesson 5) course sommelier. Return to the villa at 18.00. Free time. Or optional excursions.

  7. Breakfast at the villa.

    10:00 A walk through the gardens of Boboli. Free time. 18.00-20.00 course sommelier (lesson 6). Barbecue and a final dinner at the villa.

  8. Breakfast at the villa. Departure and transfer to Rome airport.
